Spring is a celebration of freshness and rebirth, and it brings a sense of optimism and renewed energy. This is when we see lots of fresh, leafy greens like spinach, baby kale, and other types of lettuce growing, it is also when the early-season vegetables like peas, radishes, and spring onions begin to make an appearance.
Spring salads should reflect the season and offer a light and refreshing feel, think vibrant colours drizzled with a light vinaigrette. One of our favourite Spring-time offerings is our Soy and Sesame Soba Noodles; this dish is packed with fresh colourful ingredients, including soba noodles, soy, sesame sugar snaps, carrots, baby corn, broad beans, shaved radish, spring onion, and pea shoots.
Summer Salads
Longer days and warmer weather mean more time for the outdoors and fun. At this time of the year, fruits and vegetables reach their peak ripeness and are meant to be enjoyed. In Autumn, we slowly begin to move away from the lighter, refreshing flavours and look for something a bit richer, with a distinctly warming and grounding feeling. We see the beautiful yellows, oranges, and reds appear around us in nature and it can be fun to add that onto our plates – our popular Aubergine, Cabbage, and Black Quinoa salad is a fantastic example. This hearty dish includes black quinoa, aubergines, roasted butternut squash, cavolo nero, spring onion, pomegranate, feta, and harissa tahini yoghurt, all creating an array of rich autumn colours to warm your belly and soul.
Winter Salads
Winter is when we start to crave hearty greens, like kale and Swiss chard, and when root vegetables become the star of the show, ready to keep us healthy and strong through the colder months. A winter salad should aim to bring warmth and comfort, like our hearty Sweet Potato, Red Rice, and Pecan Nuts salad, which includes roasted sweet potatoes, chopped celery, parsley, red rice, pecan nuts, radish, spring onion, and cranberries, topped with fresh herbs.
